Did you know that the big egg producing farms can sell "shell eggs" up to 40 days old??? Any eggs over 40 days old are scrambled and sold as "liquid egg product" to restaurants and facilities. That 39 day old egg can be shipped to your grocery store and sold as "fresh". When eggs are washed, the protective "bloom" is removed, exposing the egg to bacteria, so the eggs need to be refrigerated. Unwashed eggs are protected and do not require refrigeration.
